Ah! I can’t believe that christmas is tomorrow. It seems unreal. I have had a hard time getting into the spirit this year. Maybe because there are a million things going on in our lives right now (not like it is any different than the rest of the year!). We will be having a white christmas this year, which is always exciting. But, the last few days of weather have been a real downer. Pouring rain, fog, mist, ice building on absolutely everything. The power has been going off and on for days. Which hasn’t been very helpful with my holiday baking. Yesterday I had set to be my baking day, but the power was out half of the day. So, I have been baking like crazy every time it comes back on. Unfortunately, there are many people in the state of Maine still without power and probably won’t have any for days.
Moving on to these amazing cookies. Oh my word. I can’t believe that I had never used this recipe before! They are amazing. The almond flavor adds a real punch to these soft and sweet cookies. I could hardly contain myself from eating the whole batch. I even made them twice! Once so the kids could cut out and decorate their own. And then another so I could do royal icing and take a picture to share with all of you! I am still getting the hang of decorating with royal icing, so don’t mind the sloppiness! These are a real winner for any christmas package, party or just any ol’ time of the year!
Ella’s White Sugar Cookies
- 1 cup butter
- 1 cup confectioners sugar
- 1 large egg
- 1 1/2 teaspoons almond extract
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 2 1/2 cups all-purpose flour
In the bowl of an electric mixer, beat the butter until creamy. Mix in the confectioners sugar on low speed. Slowly mix in the egg, almond extract, vanilla, salt and flour. Mix until thoroughly combined. Wrap the dough in plastic wrap, and refrigerate until firm, 45 minutes to one hour.
Preheat the oven to 375º. Line or grease baking sheets.
Roll the chilled dough onto a well-floured surface to about 1/4 inch thickness. Cut out into desired shapes and sizes. Place cookies on prepared baking sheets. Bake for 8-10 minutes, making sure the cookies do not brown. Let cool completely. Decorate as desired.
