Granola Bars

When it comes to snacks in our house, it is slim pickings. I don’t like to buy a lot of crackers or whatever people normally snack on, because I feel it is unhealthy and leads to a lot of unnecessary eating. So, of course, I have to think of other things for everyone to snack on. I try to make snacks quick, healthy and easy to grab. I have to keep trying to convince my husband that a cookie doesn’t count as a snack.

Since I make my husband a lunch to take out on the boat, I try to make it reasonably healthy. Since he doesn’t stop to eat, it can’t be messy! These granola bars are perfect. They are sweet enough to satisfy a craving, but not too sweet to be as unhealthy as a cookie. They are filling as well. A perfect go-to snack.

Granola Bars

  • 2 cups rolled oats
  • 3/4 cup packed brown sugar
  • 1/2 cup wheat germ
  • 3/4 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 cup honey
  • 1 egg, lightly beaten
  • 1/2 cup olive oil
  • 2 teaspoons vanilla extract
  • 3/4 cup raisins
  • 3/4 cup chocolate chunks
  • 3/4 cup chopped almonds

Directions

Preheat the oven to 350 degrees F. Line a 9×13-inch pan with parchment paper.

In a large bowl, mix together the oats, brown sugar, wheat germ, cinnamon, flour and salt. Make a well in the center and pour in the honey, egg, oil and vanilla.

Mix well, making sure there are no dry ingredients. Mix in the raisins, chocolate chunks and almonds. Pat the mixture into an even layer in the prepared pan.

Bake for 30-35 minutes, or until the bars start to turn golden brown around the edges. Cool on a wire rack for 30 minutes before cutting. Do not allow the bars to cool for any longer because they will crumble when cut.
